Winemaking
Manual harvest and selection of grapes. Delicate whole bunch pressing and racking for natural sedimentation. Slow fermentation at controlled temperature in large oak barrels (70 & 30 hl). Malolactic fermentation and aging for 12 months on fine yeasts in traditional wooden barrels.
